Anyone in the mood for pies? I rarely bake around here (because I DON’T NEED TO EAT THIS STUFF), but I baked something for a friend on Tuesday. To be more specific, I baked her a delicious coconut pie! My mother-in-law gave me this scrumptious, easy-peazy recipe!
My friend’s family enjoyed the pie so much, I decided to bake her another one today. The recipe makes two pies — so I decided to make FOUR pies and give them away.

Ta daaaaa!
Well, it wouldn’t be nice if I didn’t share this incredibly easy recipe with you! Enjoy and share with your guests. They will think you slaved in the kitchen for sure. (BTW … I use the frozen pre-cooked regular pie shells and I use real butter.) Click on the recipe if you want to enlarge it.
Princess enjoyed the first piece!
Yummy in the tummy.
Oh, they look so good!! And the recipe seems easy enough….one thing I don't (can't) do…bake!! Can't even make a good cake using a box mix!!! :o)

Thank you for the lovely comments at Internet Cafe Devotions and over at my place 29lincolnavenue. I really feel like that hymn is now 'my song'. I'm not even sure what made me think to look up who wrote it. But God certainly has blessed me by that sweet woman and her heart for Him!
It is so nice to meet you and see your great home you have here. May God bless you!
Beth,
thank you for the recipe!!!! Coconut pie is my fav!!!
My stomach is officially growling now! haha
have a greatly blessed weekend my sister, my friend
and will you pray and intercede for me Mon-Wed. I'm having tests done and I won't even be able to talk for 72
hours while I'm hooked up to a monitor.
God knows … will you just pray? Thank you warrior of Christ! Love you!
Oh Yum! Just what I need more sweets. LOL! Thanks for sharing. It does sound very easy and looks delish!
Love your new look around here too!
Much love!
Lisa
Oh, man. Nothing in this world is better than coconut pie. I'm writing down this recipe. If I'm nice, my wife might bake me one this weekend.
I really DO love coconut pie. If I'm really nice, maybe Billy's wife will make one for me 🙂 I am SO not a baker, only a cook….and I have that problem with "once on the lips, forever on the hips" thing. Do you have a calorie-free version?
Your pies look delicious! I'm sure the recipients of those pies agree. 🙂
I rarely make pies. Bill's not a fan of them and the boys can take 'em or leave 'em. They do like the occasional pudding/frozen type pie, though. I love pie. So, I have to avoid making them or I would be the only one eating them!
My mother makes awesome, delicious, amazing, melt-in-your-mouth pies! Everything from scratch. Flaky, buttery pie crusts. Custard pies, cream pies, fruit pies. All baked to perfection.
When there is any kind of meal at my parents' church, Mother always makes pies. People leave the food line they are standing in and run over to the dessert table when she walks in with her pies, so they'll be sure to get some! lol My favorite is her peach pie…yum, yum! :-9
Okay…I'm hungry now!! lol
Thank you for this recipe! Sounds like something I can possibly convert to be South Beach Friendly AND… my husband and mother will love it!
Yep…I want this!!! Looks easy and delicious! Thanks for sharing.
Sounds yummy and I love your new look!!

Hi Beth, Thanks for sharing, coconut is one of my favs.
Now girl, I saw princess with her piece of pie, unless I missed it you didn't say if you had one. lol. There is no way that I could have baked something so delicious and not eat a piece or maybe the whole pie.
Hugs,
Sue
Love the new make over. so refreshing.
My mom makes these often and I believe it is the very same recipe. I used to not be a big fan but over the years, I have come to really like them. Making me hungry…

Not actively blogging still, but had to come and wish you a wonderful weekend! I'm so glad that the WONDER of it ALL was new to you and you loved it since I'm not linking. I just had to follow that sniff, sweet fragrance and must have been that yummy pies…too much temptation for me!!! Stay strong!

ohhh does this new BEAUTIFUL heavenly place mean I have to change my button for you??? I really love this but I loved your other button, too!!!
My daughter's favorite thing is coconut. I shall have to try this.
I had to laugh Beth. The first thing I thought of was …wow, her oven is really clean!
I do love coconut but have never had a coconut pie. But it sounds fairly easy with the suggestions you mentioned. However, I just published my Fitness Friday post earlier today as you know. I have to watch my calories for now so I can fit into my dress for my niece's wedding in September. But another time …
Ooh, boy, who doesn't love pie. I can't wait for the rhubarb to come up so my grandma will make some rhubarb pies!
Oh gosh do they look good! Sure wish I liked coconut!
