Happy Day After Thanksgiving Everyone or should I say HAPPY BLACK FRIDAY!
I’m sure some of your crazy brave people are out shopping. I was once a Black Friday shopper! Now, with a 5 year old, my shopping wings have been clipped and I’m grounded. Instead, we will open our Christmas tree lot today!
If you were out in the madness, I pray you will survive to read this. Ha.
In my last post I asked if anyone had a yummy squash casserole recipe. Thankfully, I hit the jackpot with the recipe I found online. It was DELICIOUS. I thought I’d share with you!
Yellow Squash Casserole from Allrecipes.com.
Ingredients
- 4 cups sliced yellow squash
- 1/2 cup chopped onion
- 35 buttery round crackers, crushed
- 1 cup shredded Cheddar cheese
- 2 eggs, beaten
- 3/4 cup milk
- 1/4 cup butter, melted
- 1 teaspoon salt
- ground black pepper to taste
- 2 tablespoons butter
Directions
- Preheat oven to 400 degrees F (200 degrees C).
- Place squash and onion in a large skillet over medium heat. Pour in a small amount of water. Cover, and cook until squash is tender, about 5 minutes. Drain well, and place in a large bowl.
- In a medium bowl, mix together cracker crumbs and cheese. Stir half of the cracker mixture into the cooked squash and onions. In a small bowl, mix together eggs and milk, then add to squash mixture. Stir in 1/4 cup melted butter, and season with salt and pepper. Spread into a 9×13 inch baking dish. Sprinkle with remaining cracker mixture, and dot with 2 tablespoons butter.
- Bake in preheated oven for 25 minutes, or until lightly browned.
I doubled the recipe because it would have been WAY TOO THIN for a 9 X 13 dish (plus it wouldn’t have been enough for a Thanksgiving gathering). But the original recipe would be great for a family of 4 (just in a smaller dish).
The Christmas season has officially begun around here. I guess I better get hoppin’ …

I'm always on the outlook for good recipes. Thanks for sharing this squash recipe with us Beth. It looks good. I made a stuffing recipe that I found online yesterday and it was a hit with the family. I put a link to the Picky Palette on my Thanksgiving post yesterday. That blog has really good recipes that are worth checking out.
I don't do the black Friday crazies. If anything, I look online. If I lived closer, I'd get my Christmas tree from you. 🙂

I don't go out on black friday. No way! We did go to Walmart at 6:00 last night, and it was totally dead. Very nice!

Sounds good, though my hubby isn't a squash fan, so I may skip it. No Black Friday for me – unless you count a trip to the grocery store for eggs and Zyrtec!
I have never been shopping on black Friday. I'm not a shopper to begin with, so this is even more unappealing to me..lol!!

My hubby is putting up our tree as we speak & I mailed my cards out this morning! Now all I have to do is most of my shopping.

Glad you found you a recipe for Squash casserole!
Once upon a time I went shopping on Black Friday, but no more! I don't need something that bad…even though I'll admit I did consider going before work to get a flatscreen TV for $98….but decided later it wasn't worth it!!
